How to make it

  1. 1Heat the olive oil in a large skillet over medium heat. Add the ground turkey and cook, breaking it into small pieces, until no longer pink.
  2. 2Add the bell pepper and zucchini. Cook for 4 to 5 minutes, until the vegetables begin to soften.
  3. 3Stir in the garlic powder, Italian seasoning, salt and black pepper.
  4. 4Add the white beans and cook for 2 to 3 minutes, just until heated through.
  5. 5Stir in the spinach and cook until wilted, about 1 minute.
  6. 6Remove from the heat and stir in the lemon juice. Divide into bowls and add feta, if using.

Good to know

How to serve it: Serve as-is, or add a small scoop of brown rice or quinoa if you want a heartier meal.

Swaps: Ground chicken works in place of turkey. Chickpeas or cannellini beans both work well. Use broccoli, green beans or whatever vegetables you already have instead of zucchini and pepper.

Leftovers: Keeps covered in the refrigerator for up to 4 days. Reheat gently in the microwave or a skillet.
