How to make it
- 1Season the chicken with the garlic powder, Italian seasoning, salt, and pepper.
- 2Cook the chicken in the olive oil over medium heat until fully cooked through. Let it rest a few minutes, then slice.
- 3Cook or roast the vegetables until tender-crisp.
- 4Blend or whisk together the cottage cheese, lemon juice, Dijon, garlic, herbs, and enough water to make a creamy, pourable sauce.
- 5Divide the base between two bowls, add the vegetables and sliced chicken, then spoon the cottage-cheese sauce over the top. Add fresh cucumber, tomatoes, or herbs if you like.
Good to know
How to serve it: Serve warm with a simple side of fruit or extra vegetables if you want a little more on the plate.
Swaps: Rotisserie chicken, turkey, salmon, tofu, or beans all work in place of the chicken. Swap the grain or potato base for greens if you prefer, and Greek yogurt can stand in for the cottage cheese in the sauce.
Leftovers: Store the bowl components and the sauce separately in covered containers in the refrigerator. Reheat the chicken, base, and vegetables, then add the sauce after heating.
